These madeleines are so easy to bake....you will get about 40 mini madeleines or 24 large ones if you have the large pans. I prefer the mini bite size ones!
You will need: 2/3 cup sugar, 3 eggs plus 1 more egg yolk, juice from 1 small lemon, and zest from that lemon...also a pinch of salt, and 1/4 cup sifted flour and 1 stick of butter melted.
Butter each section of the madeleines baking pans......in a medium deep bowl beat the sugar, eggs, and lemon juice and then fold in the flour and mix in the butter - stir all ingredients. Spoon the batter into the mold and fill 2/3 of the way.
Bake 18 minutes for the mini's or 20 minutes for the large at 350 degrees in a preheated oven.
